Antonin Carême appears in the Pleasures series as a modiste, or clothing designer, which is a frightful affront to history. Carême was one of the first celebrity chefs, a man who cooked for kings and tsars, wrote books, invented the soufflé – and the chef's hat. His deserts were not only wonderful to eat, but gorgeous. Here are four of his desserts, illustrated and published after his death by his assistant.
